Gluten Free Quinoa Tabbouleh - a healthy vegan friendly appetizer or side dish that makes a ton but will disappear quickly!

1 cup cooked quinoa (for the best flavor cook quinoa in chicken broth)
3 bunches of fresh parsley, finely chopped
1 bunch fresh mint, finely chopped
4 Roma tomatoes, diced
1 bunch green onions, finely chopped

For dressing;
1/2 teaspoon salt
1/3 cup olive oil
1/4 cup lemon juice
1.5 teaspoons sumac*
dash pepper
dash cinnamon
dash cayenne pepper
1. Wash and dry (the best you can) your herbs. I chose to use my food processor to finely chop the parsley and mint, but it's up to you. If you use your food processor I recommend chopping half the stem...
