Gluten Free Ranch Cheeseball

I love all the delicious gluten free rice crackers available now, and I plan to enjoy them even more this Christmas with my favorite cheeseball recipe. For such a simple recipe I’m always amazed at how many requests I get for it at gatherings. And the recipe makes 2 cheeseballs, so if you have a “mixed” family (some gluten free, some not) like I do, you can designate one for the gluten free crackers!

2 (8 oz) packages cream cheese
1 (1.0 oz) pkg Hidden Valley Ranch Original Salad Dressing and Seasoning Mix
4 green onions chopped
1 cup (+ or -) chopped nuts of your choice (I used pecans for this one.)

1 cup (+ or -) chopped nuts of your choice (I used pecans for this one.)
Put cream cheese, ranch seasoning, and chopped green onions in the bowl of a heavy mixer. Mix until all ingredients are well mixed.
Using a rubber spatula, scrape half of the mixture into a ball shape and roll it in the chopped nuts. Once the nuts are covering the outside of the cheese ball, you can use your hands to get a more perfect ball shape.
Repeat step 2 for the remaining cheese ball.
Serve with gluten free rice crackers.
