Goat Cheese, Spinach and Caramelized Onion Chicken Pizza

1 lb. store-bought, fresh pizza dough (found in bakery department, pre-rolled if possible)
1 tbsp. extra virgin olive oil
1 lb. boneless, skinless chicken breasts, chopped into bite-size pieces
1 tbsp. butter
1 large yellow onion, chopped
3-4 garlic cloves, minced or pressed
1 container (10 oz.) frozen chopped spinach, thawed, pressed and drained
Sea salt and fresh ground pepper, to taste
1 small container (4 oz.) crumbled goat cheese
Splash or two of lowfat milk
1/2 cup shredded mozzarella or italian blend cheese
fresh basil, chopped for topping
