Granny's Chicken Rice Soup

Chicken soup for the soul!

Chicken Stock:
3 pound chicken
10 cups water
2 stalks celery, leaves on
1 whole onion
few whole peppercorns
salt to taste

To Make the Soup:
2 cups chopped cooked chicken
4 carrots
2 stalks celery
3/4 cup long grain rice, uncooked
salt and pepper to taste
Prepare the Soup: While the chicken is cooling, coarsely grate the carrots and slice the celery. Taste the stock and adjust seasoning , then heat the stock to boiling, and add the vegetables and rice. Chop chicken and add to soup. Cook until heated through. We always have this soup with crusty bread.
