Greek Chicken Skewers

The yogurt marinade makes the chicken nice and tender.

5oz. c. plain non-fat greek yogurt
2 garlic cloves, minced
2 tsp. dried oregano, crumbled
1/2 tsp. pepper (freshly ground)
½ tsp. kosher salt
1 lb. boneless, skinless chicken breast, cut into 1” pieces
Juice of ½ lemon

Juice of ½ lemon
Whisk first 4 ingredients together in bowl. Add chicken and turn to coat. Cover and let marinade for at least 30 minutes, but preferably much longer. Preheat broiler and line pan with foil. Thread chicken pieces on metal skewers and broil approximately 6 minutes, then turn skewers over and broil until chicken is done, approximately 4 minutes. Remove chicken from skewers and serve.
