Greek-Inspired Chicken & Veggie Pita Wrap

One of our very favorite meals! Full of delicious flavors that complement each other so well, you won't want to wait to make this again! Everything can be prepped ahead of time, so you can just pull it all out of the fridge when you are ready to cook. This is one of those guest-impressing-they-will-want-the-recipe meals. Enjoy!

2 large chicken breasts, cut into bite sized pieces
8 oz small whole mushrooms, stems removed
1-2 bell pepper, cut into bite sized pieces
2 small zucchini, sliced (cut in half if large)
1 small red onion, cut into bite sized pieces
1 recipe Zesty Italian Dressing (below)

Zesty Italian Dressing
1/4 cup white vinegar
1/4 cup lemon juice
2 tsp sugar
1/2 tsp salt
1/2 tsp seasoning salt
1/2 tsp red pepper flakes
1/4 tsp black pepper
4 cloves garlic
1/2 cup olive oil
1/3 cup Parmesan cheese
3/4 tsp Italian seasoning

Lemon Rice
1 T. butter
1 c. long grain rice
1/2 t. salt
1 T. lemon juice
2 1/2 cups chicken broth

1 cucumber, chopped
1 heart Romaine lettuce, cut or torn thin
