Green Chile Meatloaf

My husbands absolute favorite dish.... he will eat an entire loaf pan by himself! (Not usually in one sitting but it HAS happened before!)

1 lb. hamburger
1/2 cup tomato sauce
1/2 cup ketchup
2 eggs
1 cup Italian breadcrumbs
8 oz Monterey Jack, sliced
Green Chile's....to taste (I put 2 thick layers)
Salt and pepper
Combine tomato sauce and ketchup. Reserving half, take one half of this sauce and put in another bowl. Add the hamburger, eggs, breadcrumbs, and salt and pepper. Mix well. Slice cheese and clean chile's. In a loaf pan, put a spoonful of reserved sauce on bottom to keep it from sticking. Split meat mixture in half. Layer half of it in loaf pan. Top with a layer of the sauce, a layer of chile's, and a layer of the slices of Monterey Jack. Repeat all layers again. I wait to put the top layer of cheese for the last 30 mins of cooking. Bake at 350° for 1 hour. (I usually cook it a little longer to get a brown on the meat. AND this feeds 1 person.... if you are feeding my husband that is, LOL! Most of the time I double the recipe and use a baking dish instead of a loaf pan.)
