This Green Salad with Citrus Dressing has no green lettuce, but there are enough other green and crunchy vegetables to make a delicious salad. The red chard is the star of the salad as it provides the leafy section, the beautiful dark green background color and the red veins make the salad pop. The citrus dressing is made up of mainly lemon and orange juice with mustard and maple syrup giving the salad a sweet acidity.

1/2 green bell pepper
2 stalks celery
1/2 Granny Smith apple
2 whole kiwi fruit
10 green asparagus
1/2 cup dried cherries
1/4 cup sunflower seeds
5 sprigs flat leaf parsley
Citrus Dressing
2 tablespoons lemon juice
3 tablespoons orange juice
1/4 cup olive oil
1 1/2 teaspoons Dijon mustard
1 teaspoon maple syrup
pepper and salt

1. Heat an oven to 350 degrees F. Place the sunflower seeds on a baking sheet and roast them for a few minutes. Allow to cool.
