This salsa is bursting with fresh flavor and is perfect with all of you Mexican favorites!

2 ears of corn
2 jalapeno peppers (use just 1 if you want the salsa to be mild)
3 medium tomatoes, seeded and chopped
1/4 red onion, finely chopped (if you really like the onion flavor, use more)
1/4 cup cilantro, finely chopped
juice of one lime
salt and pepper to taste
