Grilled Shrimp Scampi

1/4 cup olive oil
3-4 cloves garlic, minced
Juice of 1 lemon
1/4 cup white wine (optional)
1/4 cup fresh Italian flat leaf parsley
Pinch of red pepper flakes
Pinch of salt
1 lb 51/60 shrimp deveined and peeled
In a small bowl, combine olive oil, garlic, lemon juice, wine, parsley, red pepper flakes and salt. Reserve about 1/3 of marinade. Place shrimp in bowl and toss to coat shrimp. Set aside for about 30 minutes. Meanwhile, soak wooden skewers for about 20 minutes. Preheat grill to medium -high. Thread the shrimp onto the skewers and grill 3- 4 minutes each side basting with reserved marinade. Serve on or off the skewer.
