Grilled Stuffed Quesadillas

Easy and Delicious and healthy all in one! A family favorite

4 Burrito sized tortillas
2 cups your choice of cheese (I use pre-shredded Mexican blend cheese)
2 cups cooked chicken (flavored how you prefer)
1 can corn
1 can black beans
1 medium ripe avacado
crushed red pepper flakes
Spray non stick spray onto a skillet or grill (I use my George Foreman grill!) Layer a handfull of each ingredient on half of the tortilla (be sure to spread everything evenly) Cook quesadilla on 1 side until cheese is melted Flip onto other side and heat until tortilla is golden brown on each side Cut into 3 triangles with a pizza cutter Top with sour cream, salsa, or veggies if you'd like
