Ham fried rice

A delicious and very yummy ham fried rice dish. Better the next day :)

2 cups jasmine rice
3 cups water
Rice cooker
12 slices or more sandwich ham or leftover ham from a dinner you had during your week.
2 tbs maple syrup
1 tbs cinnamon sugar
1 small pkg of frozen veggies the peas, corn, and carrots
5 eggs
2 tbs or more garlic
1/3 cup soy sauce I love using the light kind comes in a green bottle lower sodium
1 tsp or more salt and pepper
2 tbs veg oil, coconut oil
3 cups water
Rice cooker

Add rice and water to your cooker and cook until done. I will sometimes take my rice, put it in a strainer, and rinse all the starch off for 10 mins or longer until water is clear. This helps create more fluffy rice. Not a deal breaker, if you don't do that step your rice will still be fantastic!
While that is cooking, I take and dice up my ham, add the syrup and cinnamon sugar, and cook on med heat until I have a nice glaze on my ham. This is your key to having amazing ham fried rice, plus the combo of the garlic and soy sauce.
In a deeper pan, put your oil in and set to high. Get your eggs cracked and in a bowl. Have a wooden spoon ready, same with salt, pepper, and garlic. When your oil starts to smoke dump your eggs in and cook, doing this creates a fluffy egg. It will pop then whisk and stir fast, breaking the yolk and creating a nice crust on the eggs. Add a dash of salt and pepper, then garlic, and continue to mix until the eggs are all fully cooked. Next, add your frozen veggies and reduce the heat down to a med/high setting. Again you'll season with a dash of salt and pepper, or garlic, then starting to add the soy sauce. Once that is cooking, add your ham. Stir, adding more garlic, soy sauce, salt and pepper. Next, add your rice to this mixture. I find it best to add everything in a big bowl and stir together, adding soy sauce until all rice is evenly coated with sauce and sprinkle with garlic. You want to keep tasting along the way. For flavor profile and balance plus it's a good habit to get into while cooking sampling your work. Then enjoy!
