Ham & Lentil Soup

Ham chunks and Lentils make this a hearty and tasty soup. Perfect for using up a ham bone.

8-10 cups of broth from the Ham
4 medium carrots, finely diced ( I use an electric food chopper)
1 medium onion, finely chopped
2/3 cup dried lentils, rinsed
2 cans (6 oz) tomato paste
1 Tbsp dried parsley
1 Tbsp. White vinegar
1 tsp. salt
1 1/2 Italian seasoning
1/2 tsp. pepper
1 1/2 cups diced Ham
In a large stock pot, combine all the ingredients together; bring to a boil. Reduce heat, cover and simmer for 25 minutes. Simmer uncovered for an additional 10 minutes.
