Happy Face Blueberry Cupcakes

These happy face blueberry cupcakes are fun to make and the kids love them. I like them simply because they are happy and i love blueberries. But they taste great too.

125g Butter
125g Raw Sugar
2 eggs, medium sized
175g Flour
1 teaspoon Baking Powder
50g Blueberries

For the icing
1 cup icing sugar
1 teaspoon butter
food coloring
blueberries for garnish
raspberries for garnish
Cream the butter and sugar together in a bowl. Beat the eggs until thick and then add alternatively with sifted flour and baking powder. Add the blueberries with the last of the flour. Place the mixture into cupcake liners. Bake foe 10 to 12 minutes at 200 C (400 F) Allow them to cool For the icing Place a teaspoon of butter into a pan and melt. Add the icing sugar and then add a little water or more icing sugar until you get the right consistency. Ice the cupcakes. Use two blue berries for the ice and a piece of logan berry or raspberry for the nose. Put a little red coloring into the icing sugar and pipe a smiley face onto the cupcakes.
