A homemade bread with whole wheat and multi-grains

1 1/2 cups (180 grams) unbleached, all-purpose flour
1 1/2 cups (180 grams) white, whole wheat flour
2 tbsp. vital wheat gluten
2/3 cups harvest grain mix (or seeds and grains of your choice)
1 1/2 tsp. kosher salt
1 tbsp. agave or honey
2 tsp. instant yeast
1/4 cup non-fat dry milk
1 1/4 cups lukewarm water (105-110º )
1 tbsp. non-fat Greek Yogurt
