Healthy Apple and Strawberry Muffins

2 1/2 cups wholemeal self-raising flour
1 teaspoon ground cinnamon
1/2 cup brown sugar
2 apples, peeled, cored and diced
1 egg, lightly beaten
1/4 cup extra-light olive oil
1 3/4 cups fat-free strawberry yogurt
1. Preheat oven to 190°C (375°F) and line a 12 hole, 1/3 cup capacity muffin pan with paper cases 2. Combine flour, cinnamon, sugar and apples in a large mixing bowl. Add egg, oil and yogurt and stir until just combined. 3. Spoon into cases and bake for 20-25 minutes, or until golden brown and firm to touch. Allow to stand in pan for 5 minutes and transfer to a wire rack to cool before serving
