Celebrate the season's fresh produce with a light, fresh, and Healthy Blueberry Peach Cobbler!

6-7 cups total of sliced peaches, blueberries, or a combination of the two (I didn’t even peel the peaches, but you can if that’s your preference)

3 tablespoons cornstarch

1 teaspoon cinnamon

1 teaspoon vanilla extract

1/3 cup whole wheat flour (can substitute with all-purpose flour if desired)

2 tablespoons wholegrain cornmeal

1 tablespoon sugar, xylitol, or stevia

¾ teaspoon baking powder

¼ teaspoon salt

2 tablespoons butter

¼ cup milk

This crispy fried chicken sandwich recipe is better than Chik-Fil-A, Popeye's or McDonald's! The chicken breast is brined in pickle juice, breaded with flavorful seasonings, fried until golden brown, and then piled on a toasted brioche bun with lettuce, tomato, pickles and mayonnaise. Serve the sandwich with a side of waffle fries and homemade Chik-Fil-A sauce for dipping!

4 chicken cutlets
1/2 c milk
1/2 c dill pickle juice
2 c all purpose flour
2 T confectioners sugar
2 t baking powder
2 t paprika
2 t kosher salt
1/2 t black pepper
1/2 t garlic powder
1/4 t onion powder
