3 cups frozen southern-style diced hash brown potatoes ( thawed )
½ teaspoon salt-free Cajun seasoning blend
2 tablespoons chopped fresh parsley
¼ teaspoon salt

Bruschetta Chicken is a delicious, healthy dinner recipe! Seasoned and grilled chicken topped with homemade bruschetta and balsamic glaze! It's an easy dinner perfect for a busy weeknight.

Chicken:
1 tbsp olive oil
2 large boneless skinless chicken breasts
2 tsp Italian seasoning
1/2 tsp kosher salt
1/4 tsp black pepper
Bruschetta:
4 Roma tomatoes
1/4 red onion
3 cloves garlic ( finely chopped )
4 tbsp fresh basil ( shredded )
2 tbsp olive oil
1/2 cup Parmesan cheese ( shredded )
