Healthy Cauliflower Pizza
When I was growing up pizza was my absolute favourite! For me it’s one thing that was really hard to give up when I started eating healthy. Which is why this recipe makes me so happy. It’s so nutritious and I actually really prefer it to bread based pizza, it’s surprisingly really filling too. If you don’t have a food processor, you can easily make the base by grating the cauliflower (it should end up looking just like rice). For the base:
1 cauliflower
100g/3.5 ounces of sunflower seeds
1 egg, beaten
1 tbsp dried oregano
For the topping:
1 can of chopped tomatoes
1 tbsp of tomato purée
And any other healthy delights you might want to add…we chose onion, tomatoes, mashed avocado, pesto and black olives.

1) Chop the cauliflower into chunks and blitz in a food processor until finely chopped (if you don’t have a food processor you can also grate the cauliflower).
