Crunchy lime and macadamia cookies with a gooey macadamia butter filling that are surprisingly healthy! Dairy free and sweetened only with coconut sugar and honey.

100g roasted salted macadamia nuts

100g coconut sugar

1 lime, zested

1 tbsp lime juice

120g macadamia oil

190g plain wholemeal flour

½ tsp bicarbonate of soda

1 tsp vanilla extract

filling;

200g raw macdamia nuts

1 tbsp honey

1 tbsp lime juice

pinch salt

15g macadamia oil

1 c sugar
3 T cornmeal
3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
