Healthy Parsnip Soup

This delicious warming parsnip soup makes the perfect healthy and nutritious starter or lunch. It’s really simple to make and is full of goodness. To make the vegetable broth, I have a great easy recipe here, but alternatively you could use vegetable bouillon. I’ve served this soup with chopped walnuts, which add a delicious healthy crunch to the dish. Hope you enjoy!

2 cups/450g parsnips
1 large carrot
1 onion
1 tbsp. coconut oil
1 tsp. cumin
1 tsp. turmeric
750ml vegetable broth
