Healthy Peach Cobbler

This is a THM - E dessert.

Fruit:
1 pound peaches (about 4 to 5 large peaches)
1/3 cup Truvia
1/8 cup oat fiber
1 tablespoon lemon juice
pinch of sea salt

Topping:
3/4 cup old-fashioned oats, blended into a powder
1/4 cup oat fiber
1/4 cup Truvia
1 1/2 tsp. aluminum free baking powder
1/2 tsp. cinnamon
pinch of salt
1 tablespoon of butter, softened
1/4 cup unsweetened almond milk
1/8 cup + 1 tablespoon egg whites
Preheat the oven to 400 degrees. In a bowl, combine all above ingredients and set aside. Take 3/4 cup of old-fashioned oats and put in a blender. Blend until oats turn into a powder - just a few seconds....
