Healthy Tomato Soup

Making your own delicious and creamy tomato soup has never been easier than this, it’s also super tasty and healthy too! :) I’ve topped mine with pumpkin seeds and coriander, but feel free to experiment with any nuts or seeds that you prefer. This recipe also calls for vegetable broth and I have a great easy recipe for this too which is so simple to make and a great way of using up vegetables. It also tastes so much better than shop bought ones.

3/4 cup/150g tomatoes, chopped
1 can chopped tomatoes
150ml vegetable broth
1 onion, finely diced
2 garlic cloves, minced
1 tsp turmeric powder
1 tsp coconut oil
1 tsp dried basil
1 tsp mixed herbs
1 tbsp apple cider vinegar
Freshly ground black pepper
Optional: pumpkin seeds, coriander to garnish
Heat the coconut oil in a pan then fry the onion and garlic until softened (approx 1 minute). Add turmeric, mixed herbs and chopped tomatoes, and cook for another 2-3 minutes (until the tomatoes softened)...
