Hearty Chicken Pot Pie

I updated the classic chicken pot pie with some of my favorite ingredients to create this savory and comforting dinner. Add a salad or some fruit and you're set!

16 oz package frozen mixed vegetables
1/2 cup butter
1/4 cup flour
1 medium onion, chopped
1 tablespoon garlic, minced
1/2 teaspoon Emeril's seasoning
Pinch of smoked paprika
1 teaspoon balsamic vinegar
1/2 teaspoon Montreal Chicken Seasoning
1/4 teaspoon black pepper
1 tablespoon dried parsley
1 chicken bouillon cube
1 1/2 cups water
12 oz can evaporated milk
2-2 1/2 cups chicken, cubed
2 pie crusts, uncooked
2 teaspoons flour
