Hearty Chinese Chicken Soup

8 chicken small drumsticks or wings
2 shitake mushroom
3 jujube red dates
8 goji berries
4 ginger slices
water or chicken broth
Salt to taste
Soak shitake, dates, and goji berries, if using dried. Put chicken, shitake, dates, and goji berries in a pot, and add enough water or chicken broth to cover. Bring to boil, then remove foam on top. Add ginger and salt, cover and cook over low heat for 1 and half to 2 hours.
