Hearty Zucchini Lasagna

This is a great low carb and gluten-free option! Zucchini is probably one of our favorite vegetables and I always incorporate sliced as a layer in my lasagna, but I decided to slice it length-wise to take the place of the lasagna noodles.

1 large container of ricotta cheese
3 c of mozzarella cheese
1 T oregano
2 eggs**
1 c parmesan cheese
1 red bell pepper sliced
2-3 zucchinis sliced length-wise (3-4 slices depending on the size of the zucchini)
4-6 c of your favorite pasta tomato sauce (just depends on how saucy you like it)
2T EVOO
