Herb & Grits Muffins

I know, who would think to put grits in muffins??? These babies are tender, moist and substantial and are GREAT paired with a bowl o f soup.

1 1/2 cups flour
1 1/4 cups instant grits or cornmeal
3/4 cup cake flour
1/4 cup sugar
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, cut in small pieces
1/3 cup olive oil
3 eggs
1 1/3 cups buttermilk
1/4 cup fresh flat-leaf parsley, chopped
2 tablespoons chives or green onion tops, minced
2 tablespoons dried basil
Preheat the oven to 375 degrees. Grease a 12-cup muffin tin with butter. In a medium sized bowl combine flour, instant grits or cornmeal, cake flour, sugar, baking powder, baking soda, and salt.
