3 cups (375g) plain/all-purpose flour
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 cup (115g) unsalted butter, chilled and cubed
1/2 cup (100g) shortening or lard, chilled and cubed
6 tablespoons ice cold water
For the Filling
5 - 6 cooking apples, cored, peeled, and thinly sliced
1/2 cup (100g) light bown sugar
1/4 cup (30g) plain/all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 teaspoon vanilla extract
1 large egg, beaten with 1 tablespoon milk
