The perfect comfort food meal. A rich and creamy filling topped with buttery pastry. And you likely have everything you need for it already - so you should probably indulge.

For the pastry:
2 cups all purpose flour
1/2 tablespoon granulated sugar
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
6 tablespoons cold shortening, cut into pieces
1/4 cup ice cold water
1 tablespoon egg, whisked together with 1 tablespoon water
For the filling:

1 medium onion, diced
2 carrots, chopped
2 celery stalks, chopped
2 cloves garlic, minced
1/2 cup all purpose flour
2 cups low-sodium chicken stock
1 1/2 cups milk, 2%
4 cups cooked, shredded chicken
1 teaspoon dried thyme
1 teaspoon dried parsley
2 teaspoons kosher salt
1/2 teaspoon black pepper
1 cup peas, frozen or fresh
1 cup corn kernels, frozen or fresh
