Homemade Hawaiian Haystacks Recipe

These haystacks are made with a creamy chicken sauce made from scratch. No canned cream of chicken soup. For added color and flavor I sautéed zucchini and bell pepper for another hot topping that is quick and super easy to make along with the suggested sides list.

6 tbsp butter
1 onion diced
3 chicken breasts raw, cut into ½” cubes
1/3 cup flour
¼ tsp pepper
1 tsp salt
½ tsp garlic powder
¼ tsp ground mustard
1 ½ cup milk coconut or almond milk will work as well
1 can (14.5 oz) chicken broth
1 tbsp olive oil
2 zucchini quartered lengthwise and sliced
1 bell pepper red, yellow, or orange, diced
