Homemade Soft Pretzels

Soft pretzels can be both salty and sweet . Add cinnamon sugar topping for a delicious treat with a cup of tea.

1 1/2 cups warm water (110-115 degrees F)
1 tablespoon sugar
2 teaspoons kosher salt
1 package active dry yeast (you can use rapid rise)
1 1/2 cups white whole wheat flour, optional (or use 4 cups all-purpose flour)
2 1/2 to 3 cups all-purpose flour
5 cups water
3 TBLS. baking soda
1 large egg yolk beaten with 1 tablespoon water
Course Kosher salt for topping
