Honey Dijon Chicken and Sweet Potato Skewers

½ cup Non-fat plain Greek yogurt
1 tablespoon honey
2 tablespoons Dijon mustard
2 garlic cloves, minced (1 teaspoon minced garlic or 1/4 teaspoon garlic powder)
2 tablespoons chopped fresh Italian parsley or 1 teaspoon dried parsley
1 tablespoon paprika
1/8 teaspoon cayenne pepper
6 tablespoons olive oil, divided
4 chicken breasts, skinless and boneless, all fat removed, cut into 1-inch cubes
3 medium sweet potatoes, peeled and cut into 1-inch cubs
2 tablespoons water
1 medium red pepper, seeds and membranes removed, cut into 1-inch cubes
1 medium green bell pepper, seeds and membranes removed, cut into 1-inch cubes
Sea salt or kosher salt, to taste
Fresh ground black pepper, to taste
