Honey-Habanero BBQ Chicken Pizza


This amped-up twist to a modern favorite is sure to satisfy you sweet and spicy craving.

1 round frozen pizza dough, thawed according to package directions
Cooking Spray
2 medium boneless, skinless chicken breasts, cut into 1 inch cubes
1 C. shredded mozzarella (I use Kraft Shredded Mozzarella with Philadelphia Cream Cheese)
1 Tsp. garlic powder
1 Tsp. paprika
1 Tsp. onion powder
¼ Tsp. black pepper
1 Tsp. Kosher salt
½ C. purple onion, sliced
½ C. of your favorite sweet BBQ sauce (I use Sweet Baby Ray’s Original)
1-2 Tbsp. water (optional)
¼ C. chopped fresh cilantro
3 Tbsp. honey
Your favorite Habanero hot sauce (I use El Yucateco)
Preheat oven to 425 degrees. While oven is preheating, turn burner to medium high and heat sauté pan. Spray pan with cooking spray. Add cubed chicken breast to the pan. Sprinkle the garlic powder, paprika, onion powder, black pepper, and Kosher salt over chicken and stir to coat. Brown chicken evenly on all sides (about 3-5 minutes). Add sliced purple onions and BBQ sauce to the pan and toss to coat. If the BBQ sauce is too thick you can add a tablespoon or two of water to thin it out. Reduce heat to medium, cover and cook mixture until chicken cooked through and onions are tender (about 10 minutes). Stir occasionally to prevent sauce from sticking to pan and burning. While chicken mixture is cooking through, prepare pizza crust. Spray large, flat cookie sheet or pizza pan with cooking spray. Place thawed pizza dough on pan and stretch and flatten until the dough is evenly thin, about ¼ inch thick. This is a free form pizza, perfect shape is not required. Remove ¼ cup of the BBQ sauce from sauté pan. Evenly spread 3 tablespoons over dough. This will be a very thin layer of sauce. Sprinkle mozzarella evenly over dough. Keep in mind this is a thin crust pizza and too much cheese and sauce will make it difficult to cook the dough through. Spoon chicken and onions evenly over cheese. Drizzle remainder of sauce over top of pizza. Place in preheated oven and bake for approximately 20 minutes until cheese is bubbly and exposed crust is a deep golden brown. While pizza is baking prepare honey-habanero. Mix honey with habanero sauce starting with one teaspoon of hot sauce. Taste mixture for spiciness. Once you’re satisfied with the heat set aside. Remove pizza from oven and check crust for doneness by lifting pizza with a spatula and checking the middle from underneath. Drizzle honey-habanero sauce with a spoon over the top of the pizza. Top pizza with chopped cilantro. Slice and enjoy!
