Horchata is a traditional Latin American beverage made of ground almonds, sesame seeds, rice, barley, or tigernuts.

1 cup raw unsalted almonds
2/3 cups uncooked white rice
5 1/2 cups water, divided
1 cinnamon stick
1/3 cup confectioner's sugar
1/2 teaspoon pure vanilla extract

Combine almonds, rice, and 2 1/2 cups water in a large blender canister and submerge cinnamon stick. Cover and refrigerate for 8 to 12 hours. Remove cinnamon stick and blend mixture on high speed until blended as smoothly as possible - about 2 minutes. Add sugar, vanilla extract, and remaining water. Blend for 1-2 minutes more. Strain mixture through a sieve, pressing solids to release liquid. Serve chilled with a dash of ground cinnamon.
