Hot Cross Buns

An Easter classic. Buttery bread with warm spices and a bit of glaze. One of my favorite breads (all year 'round!)

6 ½ C flour
3 tsp cardamom or cinnamon or pumpkin pie spice
1 tsp sea or kosher salt
1-2 ¼ C mixed dried fruit, chopped: citrus, currants, raisins, craisins, apricots, etc.
½ C butter
2 C milk
1 C sugar
5 tsp yeast
2 large eggs lightly beaten.

Egg Glaze:
1 large egg, beaten
1 Tb milk
