Indian easy to make Eggless Fruit Cake in Pressure Cooker by Neharika

This is a simple vailla cake garnished with fruits and dry fruits.

For Base :
3 cups all purpose flour
2 cups sugar
1 cup milk powder
2 tsp. baking powder
2 cups milk
1/2 tsp vanilla essence
Mix fruits like strawbeery, kiwi, mango etc.
Oil for greasing
2 tsp. lemon juice
For icing :
2 cups icicng cream
3 cups icicng sugar
1/4 cup milk
For Garnishing:
Slices for fruits like strawberry, kiwi, blue berries, mango etc.
Roasted dry fruits like cashew and almonds cut in very small pieces.

Mix all the ingredients for making the base, except lemon and oil.
Beat the above mixture till it has no lumbs. Batter is ready
Now place the pressure cooker on the flame for pre heating, cover it with a flat plate, not its own lid.
Meanwhile, grease the baking dish with oil.
In the batter, mix lemon juice and mix well.
Now pour this batter in the baking dish.
Place the stand in the cooker and place the baking dish over it.
Cover the cooker with a flat plate and let the cake bake for next 40 mins.
Base is ready. Keep it aside for cooling.
By that time, lets prepare the icing.
Take icing cream in a large bowl and beat it with the blender it it becomes fluffy.
Now add icing sugar and again beat it.
Then add milk and vanilla essence.
Beat this mixture unlit it becomes very soft and fluffy.
Icing is ready.
Divide the cake into 2 equal layers horizontally.
Take 1 layer and apply icing on it.
Place the fruit slices on it.
Now place another cake layer over it and apply icing and fruit slices.
Apply icing on sides as well and place roasted dry fruit slices on sides as shown in picture.
Mix fruit cake is ready. Refrigertate it for 3-4 hours.
Its ready. Enjoy!!
