Indian Spiced Sweet Potato Skins

Delicious sweet potatoes stuffed with blend of Indian spices and topped with crunchy cashews.

2 sweet potatoes
2 tsp grapeseed oil
1/2 medium sized onion, finely chopped
2 garlic cloves, minced
1 tsp grated ginger
1 1/2 Tbsp cilantro, finely chopped
1 tsp garam marsala
1 tsp lemon juice
1/2 cup cashew pieces, roughly chopped
