I am IN LOVE with my Instant Pot. Who knew this could be a thing. I really am though. Instant Pot Quinoa is the best quinoa you've ever tried!

1 small onion
1 clove garlic
2/3 cup quinoa (1 Instant Pot cup)
1/4 tsp sea salt
2/3 cup water (1 Instant Pot cup)
2-4 large eggs (2 per person)
1-2 carrots (1 per person)
1/8-1/4 cucumber (1/8th per person)
6-12 grape tomatoes (6 per person)
1/2 - 1 ripe avocado (1/2 per person)
1 Tbsp tahini
1 Tbsp honey
1 Tbsp fresh lemon juice
3 Tbso avocado oil (or any other flavorless oil)
3 leaves parsley or cilantro OPTIONAL, just for decoration if you have on hand

This crispy Oven Fried Chicken recipe is coated with Ranch dressing and dredged in a flavorful blend of Corn Flakes, bread crumbs and zesty seasoning. Use chicken breast, thighs or drumsticks for an oven baked dinner that tastes like it's deep-fried! The easy oven fried chicken is delicious alongside mashed potatoes, mac and cheese, or Southern-style green beans.

1 c Ranch salad dressing
1 c dry breadcrumbs
1 c Corn Flakes cereal crumbs
2 t sugar
2 t paprika
2 t onion powder
2 t garlic powder
2 t kosher salt
1/4 c canola oil
3-4 lbs. bone-in chicken pieces ( skin removed )
