A mash-up of Italian flavors with southwest serving, these Italian Beef Fajitas are not only tasty and different, but they're quick and fun! Perfect for your busiest of weeknights.

1 pound eye of round steak
1/2 cup red wine vinegar
2 tablespoons onion powder
1 tablespoon Italian seasoning
1 tablespoon garlic powder
pinch crushed red pepper
2 cups thinly sliced onions
2 cups thinly sliced bell peppers
8 fajita size flour tortillas
1 cup shredded mozzarella cheese
1 cup diced red onions
1 cup diced tomatoes
2 cups cooked rice
14 ounces Italian stewed tomatoes, chopped
14 ounces cannelini beans, rinsed and drained
1 teaspoon minced garlic
1 teaspoon minced basil
