Italian Chicken and Vegetable Soup

Wonderful Italian flavor loaded with lots of vegetables and a little chicken- it’s completely healthy!

1-2 boneless, skinless chicken breasts
1 onion, chopped
2 cups carrot, sliced
1 cup yellow squash, sliced
1 cup zucchini, sliced
1 cup fresh green beans, cut in pieces
2 (32 oz) boxes chicken stock (can use broth)
1 (14.5 oz) can diced tomatoes
5-6 cloves of garlic, minced
2 teaspoons basil
1 teaspoon oregano
2 teaspoons olive oil
1 teaspoon salt
fresh ground black pepper to taste
shredded parmesan cheese for topping (optional)
