Italian Escarole Turkey Soup

A fast and easy soup that is full of flavor- perfect with hearty bread!

1 large onion
4 large garlic cloves, minced
2 carrots, peeled and sliced
2 celery ribs, sliced
2-3 Tbsp olive oil
1 15 oz. can diced tomatoes (preferably with Italian herbs)
1 15oz. can white beans, drained
8 1/2 cups chicken broth
2 tsp dried parsley
1 Tbsp Italian seasoning blend
1/2 tsp black pepper
2 cups chopped cooked turkey
3 cups rice
2 heads escarole
fresh parsley or cilantro, chopped
shredded parmesan cheese
