Italian Zucchini & Sausage Casserole

Even those who usually don't care for zucchini find they enjoy it in this savory casserole!

1 lb. bulk Italian pork sausage
4 tbsp. olive oil
3 medium zucchini, sliced
1 small yellow onion, diced
2 cans "Italian style" diced tomatoes, undrained
2 tsp. dried Italian seasoning
2 tsp. jarred diced garlic
1/4 tsp. pepper
1 (6 oz.) box " Savory Herb" Stove Top stuffing mix
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
Preheat oven to 350º. In a large, deep skillet over medium-high heat, brown & crumble sausage & cook through. Drain & set aside. In same skillet, saute` onion, garlic, & zucchini in olive oil. Add in seasonings. Mix in tomatoes, dry stuffing mix with seasonings, cooked, drained sausage & both cheeses. Place in a greased 9 x 13 baking dish. Cover with greased foil (to prevent cheese from sticking to top) & bake for 45 minutes.
