Japanese Omelette Rice (Omurice)

Omurice is a classic Japanese dish consisting of ketchup flavored rice cooked together with chicken and peas, and wrapped in a thin omelette. Kids love it!

2 tablespoons butter
2 skinless, boneless chicken thighs (about 8 oz or 230g), cut into 1-inch pieces
½ cup finely chopped onion
2 cups cooked rice
salt and black pepper, to taste
4 tablespoons ketchup, plus more for serving
4 tablespoons frozen green peas
2 large eggs, beaten separately
vegetable oil, for frying
