2 pounds chicken thighs boneless, skinless, cut into strips
1 pound smoked sausage cut into 1 inch pieces
2 tablespoons vegetable oil
1 large onion chopped
1 green bell pepper chopped
3 stalks celery sliced
3 cloves garlic minced
1 can (28 ounce) petite diced tomatoes with juice
2 cups chicken broth
2 teaspoons cajun spice mix
1 teaspoon thyme
1 teaspoon oregano
1 pound medium shrimp peeled, deveined, tail-off
1+3/4 cups long grain rice
salt & pepper to taste
