A lighter weeknight meal loaded with delicious super food, kale!

1 cup quinoa, rinsed
1-1/2 cups water
2-3 cups kale, massaged
8 oz cremini (baby bella) mushrooms, thinly sliced
2 tablespoons olive oil
1 teaspoon garlic salt
1 teaspoon thyme
