Kiddie Sushi

A kid friendly mock sushi dish your kids will really enjoy. This recipe is also a good way to introduce a picky child to foreign foods.

1 wheat tortilla
2 slices of turkey
2 slices of colby jack cheese
1/3 cup shredded lettuce
1 tbsp ketchup
1 tbsp mustard (you can really use any kind of condiment depending on your child's taste)
1/3 cup shaved watermellon
- Preheat oven to 250 degrees - Place tortilla on a non-stick cookie sheet - Tear up cheese slices and cover the entire tortilla - Tear up turkey slices and cover the cheese - bake for 5-8 minutes, until cheese has melted then let cool - add lettuce - Roll up the tortilla - Carefully cut the tortilla roll into 1 inch pieces - Arrange them on the plate to make them look like sushi - Add the condiments to the side - Use a vegetable peeler to shave off some watermelon pieces to look like sliced ginger - Serve as an afternoon snack - Make it fun for your kids by giving them kiddie chopsticks to try out :)
