Leeks, bacon and linguine in a creamy sauce.

1 tablespoon butter
6 slices bacon, cut into 1/2-inch pieces
2 medium leeks, white and pale-green parts only, halved lengthwise, sliced crosswise
Salt and pepper, to taste
1/2 cup chicken broth
3/4 cup heavy cream
1/2 teaspoon dried thyme
16 ounces linguine
3/4 cup finely grated Parmesan, plus more for garnish
1-2 tablespoons chopped fresh parsley
