Lemon Baked Potato

Lemon and garlic make good accents on the potato.

2 russet potatoes
1/8 teaspoon salt
1/8 teaspoon ground black pepper
2 garlic cloves, minced
¼ cup water
¼ cup lemon juice
2 tbsp olive oil

Preheat the oven to 400 degrees Fahrenheit.
Scrub the potatoes well, but don’t peel them. Cut them into wedges.
Place the potato pieces in a baking pan (just the right size to fit all of the potato wedges).
Season the potatoes with salt and pepper. Rub the garlic onto the potatoes.
Mix the marinade by combining the water, olive oil, and lemon juice. Pour the marinade over the potatoes. Be sure to cover all of the potatoes.
Bake the potatoes for about 40 minutes, then turn the potato wedges and bake another 20 minutes.
