Lemon Bars that are low carb/sugar and gluten free! These luscious lip smacking  bars have all the flavors you are familiar with, but these can be enjoyed by those watching their carb and sugar intake.

For The Crust
¾ cup coconut oil
¼ teaspoon kosher salt
1 egg yolk
1 cup almond flour
2 tablespoons coconut flour
¼ cup powdered sugar

For the Lemon Filling
½ cup Truvia Baking Blend
4 large eggs
? cups fresh lemon juice (about 4 large lemons)
2 tablespoons lemon zest
4 tablespoons almond flour

3 slices thick cut bacon
1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
