Lemon Herb Chicken

The flavors of lemon and fresh herbs on this moist grilled chicken will knock your socks off-- in a good way!

4 boneless chicken breasts or fillets
1 tbsp fresh chives, chopped
1 tsp fresh lemon thyme, chopped
2 tbsp fresh oregano, chopped
2 tbsp garlic, minced
1 tsp salt
4 tbsp oil
3 tbsp lemon juice

Place all ingredients except chicken in a large ziplock bag, mix well. Add chicken, and smoosh the chicken around in the bag until they are well-coated with the marinade. Refrigerate for 2-4 hours, turning occasionally. Heat your grill. When ready to cook, remove chicken from bag. It should be well-coated with the marinade and bits of herb. Place chicken on heated grill, and let cook for 5-7 minutes per side, depending on the thickness of your chicken, until the chicken is cooked thoroughly. Remove chicken from grill, let rest for 10 minutes under a tent of tin foil, and then serve.
